I'm Fit and Happy Green DrinkWhile Kelly was out this morning teaching a group fitness class at SHIFT, I went on a HGH hill run. When I returned to the casa, I made this morning green smoothie recipe. This version is another variation you can create, check the site for more under the good eats tab. The ginger adds a nice bite and is super fresh tasting.  As I type this post, I’m enjoying this amazing juice with the dog sitting next to me.

Jugo del Día

  • 1 bunch of organic elephant kale
  • 2 stalks of organic celery
  • 1 hand full of organic spinach
  • 1 organic apple
  • 1 organic valencia orange
  • 1 knob of ginger, yeah, organic too
  • 1 Quart of filtered water, cold
  • 1 good handful of ice (preferably filtered too)
  • VitaMix** (a must for these juices)

Recipe Instruction

Relaxing with my dogPop the greens in the VitaMix (this is a must, if you don’t have one, get one!!!) add a quart of cold filtered water. Blend that for a few minutes on high. Now add the fruit and a good handful of ice. The VitaMix will heat the liquid up, the ice keeps things nice and happy happy. Blend that for another 2 min. Presto…you are done. I like to pour this into (2) one quart mason jars. One is in the fridge waiting for Kelly…

**Note on the VitaMix: A blender that can liquify all the ingredients is crucial. I’ve tried this in my Breville blender to no avail. If you do not have a VitaMix and are serious about your health and cooking, make the investment. Blow off your Starbucks habit for a month and you will have enough money to score a VitaMix.
