We made some roasted organic chicken last night and had the breasts left over today. LEFT OVER CHICKEN SALAD! Kelly and I were on a walk discussing dinner, I remembered that we had the chicken, but I did not have any of the vegan mayo I like to use. We did just get some fresh organic eggs with our local produce delivery, why not make my own mayo the natural way, that is with 4 ingredients!

Sexy Chicken Salad ingredients | The Natural MethodMayo – this will make a cup, you will have plenty left over for other use

  • 1 fresh egg, separate the yolk and reserve the white for something else
  • About a cup of olive oil
  • Juice of one lemon or about the same amount of cider vinegar
  • 2 – 3 fresh garlic cloves
  • Pinch of celtic salt

Use a food processor and place the egg yolk and vinegar in with the cutting blade. For the olive oil, use a good quality, but perhaps not a real grassy one. The fresh olive oil you buy at stands or at a grower are great for salads, but have a bit of a grassy bitter taste that will impart in your mayo. Start the food processor and let the egg yoke and lemon/vinegar blend. The egg yolk is a natural emulsifier, so there is not much brain damage in making the mayo, just drizzle the oil in using a steady stream…not all at once that is! The mayo will turn into mayo like magic very quickly. Pop in the garlic cloves and some salt and let it go for about 10 more seconds. Done!

  • 1 full chicken breast cooked. (best if it was part of the previous nights dinner and chilled in the fridge
  • Few Celery Stalks – diced into nice small chunks
  • Tomato or cherry tomato – diced into nice small chunks
  • 1 large scallion – chopped
  • 1 crisp organic apple (or grapes)
  • 1 ripe organic avocado

Chop up your ingredients into nice small chunks, refer to the photo above. Add a few splashes of cider vinegar and some pepper to taste. You can add all sorts of herbs too, whatever you like and have at the time. Slap in a few table spoons of your homemade garlic mayo and mix it all up, taste and adjust salt if necessary.

I like to take the avocado and slice it up in long strips. Plate everything up by putting the avocado on a plate or in a bowl, drop a few heaps of the chicken salad on top and serve it up!

Raw garlic is good for you, not just to ward off vampires and your friends, it is really good for you. Research indicates that garlic has anti-bacterial properties, garlic has anti-inflammatory properties, garlic is a great source of antioxidants, and it is an Immune System Boost too. Garlic was used to fight gangrene during the world wars—I have not heard of any of my friends with this ailment, but it may be able to help you fight off more modern-day ailments!
