Have you ever tried making an home made aioli? Well, you should consider trying this easy to make poached salmon salad with no-egg, garlic and raspberry aioli. Why no egg? ‘Cause I did not have any! You can use an egg yoke if you wish, but it worked fine without it. I dressed the greens separately in a parmesan dijon vinaigrette, this dish was quite lovely. The raspberries added a sweet dimension and cut the acid and garlic nicely!

Poached Salmon Salad with eggless garlic and raspberry aioli & a parmesan vinaigrette

All Organic
  1. Kale chopped thinner than thicker
  2. Spinach chipped thinner than thicker
  3. Radicchio Chopped thinner than thicker
  4. Grape Tomatoes halved
  5. Radishes chopped however you like
  6. Celery, you guess it, how you like
  7. Good Quality Shredded Parmesan
  8. Dijon Mustard
  9. Wild-caught cold water salmon
  10. Apple Cider Vinegar
  11. Raspberries
  12. Kiwi slices if you like, or anything really
For the parmesan dijon vinaigrette
  1. Put about a tablespoon of mustard in the bottom of a bowl, the same bowl that you will use to build the salad
  2. While beating the mustard with a whisk, slowly drizzle a few glugs of olive oil into the bowl. Whip it good, whip it real good, this is called emulsification.
  3. When the oil and the mustard become one, pour in as much parmesan as you like
  4. Add a few splashes of vinegar to wet things up to salad dressing consistency.
For the no egg garlic raspberry aioli
  1. In a food processor drop in a garlic clove and a handful of raspberries, turn it on.
  2. While the raspberries and garlic are getting nuked, slowly drizzle in olive oil. Watch the mix turn to mayo consistency Typically you would use an egg yolk, you can, but I did not have eggs.
Build your masterpiece
  1. Add the greens, a handful of whole raspberries, and the neatly chopped veg into the bowl and toss everything together.
  2. In a separate bowl, carefully fold the raspberry aioli and salmon together.
  3. Plate up the salad and veg, neatly top the nest with the salmon, add the kiwi here and there like a pro.
  4. EAT!!!
